Catupiry is the most popular cheese in Brazil. Soft and creamy, it can be used in every course – here you will find four ways of starting your meal with a special touch. Check out these great Catupiry salad/Appetizer recipes:
Gourmand Salad with Catupiry, Serves 4
Ingredients:
2 carrots, grated
1/2 can corn
1/2 can peas
3.5 ounces golden seedless raisins
2 raw beets, grated
10 ounces Catupiry
Salt to taste
• Combine all ingredients, except Catupiry, mixing well.
• Add Catupiry and blend to obtain a consistent mixture.
• Place salad on the serving plates, surrounded by potato sticks.
Cherry Tomatoes Stuffed with Catupiry, Serves 4
Ingredients:
Serve with mixed green salad.
12 cherry tomatoes
1 cup Catupiry
1/4 cup ricotta
1/3 cup Gorgonzola or Blue Cheese
Lettuce, arugula and radicchio for green salad
Chopped parsley to taste
Salt and ground pepper
• Half cherry tomatoes. Remove seeds and reserve.
• In a bowl, combine Catupiry, ricotta and blue cheese, stirring until well blended.
• Stir in salt, pepper and parsley.
• Place mixture into the cavity of each tomato half.
Chicken Appetizer, Serves 4
Ingredients:
2 pounds chicken breast filets
1 pound bread crumbs
10 ounces Catupiry
2 tablespoons olive oil
20 ml lime juice
3 eggs
Salt and pepper to taste
• Season the chicken breast filets with lemon, salt and pepper.
• Cut filets into cubes.
• Insert a toothpick into each cube and coat them with Catupiry. Transfer to a baking sheet and refrigerate until firm.
• Whisk eggs, add chicken cubes and turn to coat. Remove from egg mixture and dredge in bread crumbs.
• Cook into heated oil until brown
Summer Salad, Serves 4
Ingredients:
Place all ingredients in a bowl and whisk for 5 minutes.
Salt and pepper to taste
1/2 bunch butterhead lettuce
1/2 bunch crisphead lettuce
1/2 bunch red leaf lettuce
1/2 bunch arugula
10 cherry tomatoes
1 large carrot
1/2 pound Catupiry
• Wash all vegetables carefully.
• In a salad bowl, arrange lettuce leaves following the above sequence.
• Halve tomatoes, remove seeds and fill them with Catupiry.
• Arrange stuffed tomatoes onto the leaves.
• Grate carrot over the salad and add the dressing.
Dressing:
100 ml olive oil
100 ml passion fruit juice

Today, Catupiry buys two hundred thousand liters of milk daily (53,000 gallons!) to supply the high demand all over Brazil, producing around 50 tons of cheese every day.
It is estimated that there are 15 million regular consumers of Catupiry cheese in Brazil alone. Now, food lovers from all over the world can take part in this tradition as well: Catupiry cheese has been recently made available to international markets.
